    1 (1.5-lb.) bag Hy-Vee Smart Bite strawberry reds potatoes
    1 c. smoked salmon cream cheese spread, softened
    1 (3-oz.) pkg. smoked salmon, cut into small thin strips
    Fresh dill, for garnish

    • Bowl of ice water
    • Paper towels
    • Melon baller

    Directions

    1. Cook potatoes in package in microwave on HIGH for 6 to 7 minutes or just until tender, yet firm. Cool potatoes in bowl of ice water to stop cooking. Drain; pat potatoes dry. 

    2. Cut potatoes crosswise in half; cut off a thin slice from rounded ends so potatoes stand straight. Using a melon baller, scoop out some of the center of each potato. Spoon or pipe cream cheese spread into each center; top with strip of salmon. Garnish with dill, if desired.
