    1 (3 pound) boneless pork loin roast
    1 tbsp. steak seasoning
    1 tbsp. Hy-Vee granulated sugar
    ⅔ c. packed Hy-Vee brown sugar
    2 tbsp. Hy-Vee cornstarch
    2 tbsp. Hy-Vee ground mustard
    2 c. apricot nectar
    4 tsp. Hy-Vee cider vinegar

    Directions

    1. Preheat oven to 325 degrees. Trim fat from meat. Combine steak seasoning and granulated sugar; rub over surface of roast. Place roast on a rack in a shallow roasting pan.
    2. Roast, uncovered, 1-1/2 to 2 hours or until an instant-read thermometer registers 155 degrees. Loosely cover the roast with foil and let stand 15 minutes.
    3. While roast is resting, stir together brown sugar, cornstarch and mustard in a medium saucepan. Whisk in apricot nectar and vinegar. Cook and stir over medium-high heat until bubbly and slightly thickened. Cook and stir 2 minutes more. Slice pork, spoon sauce over pork slices, and serve.
