    4 bone-in pork loin chops, cut 1-inch-thick
    4 tsp. Hy-Vee Hickory House Heart of the Grill seasoning rub
    1 ¾ c. fresh blueberries
    1 ¼ c. mango, chopped
    ½ c. cucumber, chopped
    ¼ c. red onion, minced
    3 tbsp. fresh cilantro, chopped
    2 ½ tbsp. fresh lime juice
    ½ tsp. Hy-Vee crushed red pepper flakes
    ¼ tsp. Hy-Vee salt

    Directions

    1. Rub pork chops with seasoning rub. Let stand at room temperature for 20 to 30 minutes.
    2. Meanwhile, for salsa, place blueberries in a medium bowl; slightly mash 1/3 of them with a fork. Stir in mango, cucumber, onion, cilantro or sage, lime juice, red pepper and salt; set aside.
    3. Preheat grill for direct cooking over medium heat. Place chops on grill grate over heat. Grill for 10 to 14 minutes or until 145 degrees, turning halfway through grilling. Transfer chops to a plate and let stand 5 minutes. Serve with salsa.
