    A plumcot is a combination of a plum and an apricot. Our favorite way to enjoy this seasonal fruit is on a crostini drizzled with balsamic glaze.

    ½ loaf Hy-Vee Bakery French Baguette, cut into 20 pieces, about 1/4-inch thick
    2 tbsp. Gustare Vita olive oil
    4 oz. Hy-Vee Select fresh honey-flavored goat cheese
    1 c. fresh arugula, lightly packed
    3 medium plumcots, pitted and sliced
    Gustare Vita balsamic glaze, for serving

    Directions

    1. Preheat oven to 350 degrees. Place baguette slices on baking sheet and brush with olive oil. Bake 15 minutes or until lightly golden. Cool completely on a wire rack.

    2. Spread slices with goat cheese and top with arugula and sliced plumcots. Drizzle with balsamic glaze, if desired.
