    6 plums, pitted and thinly sliced
    1 tsp. white rice vinegar
    1 tsp. ground ginger
    1 tsp. Hy-Vee Select olive oil
    4 (4 oz each) trout fillets
    Hy-Vee salt and Hy-Vee pepper, to taste
    1 lime, optional

    Directions

    1. In a small saucepan, combine plums, vinegar and ginger. Cook over medium-low heat for 10 minutes, stirring occasionally.
    2. Meanwhile, heat oil in a large skillet over medium-high heat. Add trout and season with salt and pepper. Cook for 3 to 5 minutes on each side, or until fish is opaque and flakes easily with a fork.
    3. Serve trout with plum sauce and top with freshly squeezed lime juice if desired.
