Pleasant Peach Tart

½ c. Hy-Vee dried cranberries | ||
½ tsp. apple pie spice | ||
12 large peaches, peeled, pitted and cup up (10 cups) |
Directions
- In a medium mixing bowl, stir together flour, 1/2 cup granulated sugar and baking powder. Cut in butter until mixture resembles coarse crumbs.
- In a small mixing bowl, combine egg and 1 tablespoon milk. Add to flour mixture. Stir just until moistened. Stir in additional tablespoon milk to moisten all the flour mixture.
- Turn out onto a lightly floured surface. Gently knead for 10 to 12 strokes. Roll into a 14-by-7-1/2-inch rectangle; cut lengthwise into 3/4-inch-wide strips. Cut 5 of the strips in half crosswise.
- In a Dutch oven, combine cranberries, apple pie spice, 1/2 cup sugar and peaches. Cook over medium heat 5 minutes or until bubbly. Pour into a greased 9-by-13-inch baking dish. Gently place dough strips over peaches in a lattice pattern. Sprinkle with 1 tablespoon granulated sugar.
- Place dish on baking sheet and bake at 350 degrees for 40 minutes.
- Tip: To peel peaches, cut a small X opposite the stem. Place in boiling water for 25 to 45 seconds, then into ice water for 1 minute. The skin will slip off easily.
