    1 tsp. olive oil
    1 clove garlic, minced
    ½ c. chopped red bell pepper
    ½ c. chopped sweet onion
    ½ c. sugar-free peach preserves
    3 tbsp. grainy German mustard
    ¼ c. honey
    1 to 2 tablespoons horseradish, depending upon personal tastes
    ⅓ c. crushed pineapple, canned in its own juice, drained with 2 tablespoons juice reserved
    Salt and pepper, to taste


    1. In a medium saucepan, heat olive oil over medium heat until shimmering. Add garlic, bell pepper and onion. Sauté for 5 minutes, stirring frequently.
    2. Add peach preserves, mustard, honey, horseradish, pineapple and reserved juice; simmer 3-4 minutes or until slightly syrupy. Add salt and pepper to taste. Set aside if using immediately or chill until needed.
    3. Serve with Turtleback Coconut Salmon (see recipe at
