Pineapple-Peach Dipping Sauce
Servings and Ingredients
|1 tsp. olive oil|
|1 clove garlic, minced|
|½ c. chopped red bell pepper|
|½ c. chopped sweet onion|
|½ c. sugar-free peach preserves|
|3 tbsp. grainy German mustard|
|¼ c. honey|
|1 to 2 tablespoons horseradish, depending upon personal tastes|
|⅓ c. crushed pineapple, canned in its own juice, drained with 2 tablespoons juice reserved|
|Salt and pepper, to taste|
- In a medium saucepan, heat olive oil over medium heat until shimmering. Add garlic, bell pepper and onion. Sauté for 5 minutes, stirring frequently.
- Add peach preserves, mustard, honey, horseradish, pineapple and reserved juice; simmer 3-4 minutes or until slightly syrupy. Add salt and pepper to taste. Set aside if using immediately or chill until needed.
