    2 ½ oz. silken tofu (about 1/4 package)
    ½ large ripe banana
    ½ c. pineapple juice
    ¼ c. pineapple tidbits
    ¼ tsp. coconut extract

    Directions

    1. For a really frosty treat, start with frozen pineapple tidbits and/or frozen banana chunks. Start with well-chilled ingredients.
    2. Place all ingredients in blender container and puree until smooth. Serve at once.
