    1. Place eggs in a single layer in a saucepan. Add enough water to cover at least 1-inch above the egg. Cover pan and bring to a boil quickly.

    2. Turn off the heat and remove the pan from the burner. Let the eggs stand, covered, in the hot water for 15 minutes.

    3. After 15 minutes of standing, immediately run cold water over the eggs, or place them in ice water until completely cooled. Peel eggs right after cooling for immediate use, or refrigerate them in the shell in the egg carton for use within 1 week.
