    ½ c.Hy-Vee butter, softened
    1 c.Hy-Vee granulated sugar
    2large Hy-Vee eggs
    2 c.Hy-Vee flour
    1 tsp.Hy-Vee baking soda
    1 ½ tsp.apple pie spice
    2medium apples, peeled, cored and chopped
    ¼ c.Hy-Vee chopped pecans
    4 tsp.Hy-Vee powdered sugar
    2 tsp.juice from Hy-Vee red maraschino cherries

    Directions

    1. Preheat oven to 350 degrees.
    2. In a medium bowl, mix together butter and granulated sugar until creamy.
    3. Beat in eggs.
    4. In a separate bowl, stir together flour, baking soda and spice. Mix into butter mixture until moistened.
    5. Fold in apples and pecans. Pour into a greased 8-by-4-inch loaf pan.
    6. Bake 55 to 60 minutes or until a toothpick inserted into the center comes out clean. Cool in pan for 15 minutes. Remove from pan and cool completely on a wire rack.
    7. To serve, stir together powdered sugar and juice. Drizzle over cake top. Slice.
