Pear and Grapefruit Salad with Mint

2 medium grapefruits | ||
4 medium pears, peeled and cut into wedges | ||
1 (8 oz) can apricot halves, drained | ||
1 c. seedless grapes | ||
1 c. plain low-fat yogurt | ||
2 tbsp. honey | ||
2 tbsp. chopped fresh mint |
Directions
- Peel and section grapefruit. Reserve 1 tablespoon grated rind and 1 tablespoon juice for use in dressing.
- In a medium bowl, combine grapefruit, pears, apricot halves and grapes. Cover and chill.
- In a small bowl, combine reserved grated grapefruit rind, juice, yogurt, honey and mint. Mix well. Cover and chill.
- Arrange the fruit in individual serving bowls.
- Serve the mint dressing on the side.
