2medium grapefruits
4medium pears, peeled and cut into wedges
1(8 oz) can apricot halves, drained
1 c.seedless grapes
1 c.plain low-fat yogurt
2 tbsp.honey
2 tbsp.chopped fresh mint

Directions

  1. Peel and section grapefruit. Reserve 1 tablespoon grated rind and 1 tablespoon juice for use in dressing.
  2. In a medium bowl, combine grapefruit, pears, apricot halves and grapes. Cover and chill.
  3. In a small bowl, combine reserved grated grapefruit rind, juice, yogurt, honey and mint. Mix well. Cover and chill.
  4. Arrange the fruit in individual serving bowls.
  5. Serve the mint dressing on the side.
