    Chocolate crust:
    1 c. walnuts
    ½ c. cocoa powder
    ¼ c. honey
    1 egg white
    Pumpkin filling:
    1 c. oat flour or quick oats
    ⅓ c. sugar
    ⅓ c. peanut butter
    1 c. pumpkin puree
    1 tsp. vanilla extract
    1 egg

      Directions

      1. Preheat oven to 350 degrees.
      2. In a food processor, pulse walnuts into a powder. In a medium bowl, mix walnuts and with cocoa powder, honey and egg white until well blended. Press into a greased 8-inch-square baking dish. It will be sticky.
      3. In another medium bowl, combine oat flour, sugar, peanut butter, pumpkin puree, vanilla and egg until well blended. Pour over chocolate crust.
      4. Bake for 25 minutes, or until set. Cool completely before cutting into bars.
