    ¼ c. Hy-Vee creamy peanut butter, divided
    8 Hy-Vee soft and chewy peanut butter cookies
    2 c. Hy-Vee light vanilla ice cream, divided
    ½ c. candy-coated mini baking chips

    Directions

    1. Spread 1 tablespoon peanut butter onto bottom side of each of 4 cookies.
    2. Spoon about 1/2 cup ice cream onto each cookie half. Cover with second cookie, top-side up.
    3. Roll edges in baking chips. Wrap each in foil.
    4. Freeze 1 to 2 hours or until firm.
