    ½ c. organic unsalted butter, softened
    ½ c. packed brown sugar
    ⅓ c. granulated sugar
    ⅓ c. creamy peanut butter
    1 HealthMarket organic large egg
    1 tsp. vanilla extract
    1 c. flour
    1 tsp. baking powder
    1 tsp. ground cinnamon
    2 c. Hy-Vee organic crispy rice cereal

    Directions

    1. Preheat oven to 350 degrees.
    2. Beat butter, brown sugar, sugar and peanut butter until creamy. Add egg and vanilla; beat well.
    3. Combine flour, baking powder and cinnamon. Add to butter mixture; mix well.
    4. Stir in cereal.
    5. Using a level tablespoon, shape dough into 1-inch balls and roll in sugar. Place 2 inches apart on prepared cookie sheet; flatten slightly.
    6. Bake 10 to 14 minutes or until lightly browned. Let stand 1 minute before removing cookies to racks to cool.
