Peanut Butter Cinnamon Cookies

½ c. organic unsalted butter, softened | ||
½ c. packed brown sugar | ||
⅓ c. granulated sugar | ||
⅓ c. creamy peanut butter | ||
1 HealthMarket organic large egg | ||
1 tsp. vanilla extract | ||
1 c. flour | ||
1 tsp. baking powder | ||
1 tsp. ground cinnamon | ||
2 c. Hy-Vee organic crispy rice cereal | ||

Directions
- Preheat oven to 350 degrees.
- Beat butter, brown sugar, sugar and peanut butter until creamy. Add egg and vanilla; beat well.
- Combine flour, baking powder and cinnamon. Add to butter mixture; mix well.
- Stir in cereal.
- Using a level tablespoon, shape dough into 1-inch balls and roll in sugar. Place 2 inches apart on prepared cookie sheet; flatten slightly.
- Bake 10 to 14 minutes or until lightly browned. Let stand 1 minute before removing cookies to racks to cool.
