Peachy Plum Sauce

Description
This vibrant red fruit sauce offers a complex blend of peach and plum flavors. Serve it on pancakes, waffles or ice cream sundaes. Mix and match different varieties of stone fruit and jam as you please.

2 white or yellow peaches, pitted and sliced into thick wedges | ||
1/3 to 1/2 c. water, depending on ripeness | ||
1 c. red plum jam | ||
1 ½ tsp. fresh lemon juice | ||
1 ½ tsp. Hy-Vee butter | ||
½ tsp. peach brandy |
Directions
- In a medium saucepan, combine peach slices and 1/3 cup water. Use more water if peaches are less ripe. Bring to boiling; reduce heat to medium-low heat and simmer for 15 to 20 minutes or until peaches are softened, stirring occasionally.
- Reduce heat to low. Stir in jam, lemon juice, butter and brandy and cook for 2 minutes more. Cool slightly. Store, covered, in the refrigerator for up to 1 week.
