    ½ c. Hy-Vee granulated sugar
    ¼ c. packed Hy-Vee light brown sugar
    6 Colorado peaches, pitted and sliced ½-inch thick
    2 tbsp. Hy-Vee corn starch
    ¼ tsp. Hy-Vee ground cinnamon
    Dash Hy-Vee ground nutmeg
    It's Your Churn vanilla bean ice cream, for serving

    • Medium saucepan
    • Air-tight container

    Directions

    1. Combine granulated and brown sugars in large bowl. Add peaches; gently toss until coated. Let stand at room temperature for 1 hour. 

    2. Drain and reserve juice from the fruit. If necessary, add enough water to juice to make 3/4 cup. Whisk together peach juice mixture, corn starch, cinnamon, and nutmeg in medium saucepan. Bring to a boil; reduce heat to medium-low. Cook and whisk for 1 minute or until slightly thickened. 

    3. Add peaches to juice mixture; gently stir and cook for 1 minute more. Serve as a topping over ice cream, or cool completely and store in an airtight container in the refrigerator for up to 2 days; use to make pie, crisp, or cobbler.
