Peach-Raspberry Crisp

1 (29 oz) can Hy-Vee lite sliced peaches, drained | ||
1 c. fresh raspberries (use frozen unsweetened if not available) | ||
1 tsp. almond extract | ||
½ c. Hy-Vee granulated sugar | ||
1 c. plus 2 tbsp Hy-Vee flour, divided | ||
1 c. Hy-Vee Select muesli cereal | ||
¾ c. packed Hy-Vee brown sugar | ||
½ c. Hy-Vee butter, melted | ||
Hy-Vee vanilla ice cream, optional |
Directions
- Toss peaches, raspberries and almond extract together.
- Combine sugar and 2 tbsp flour. Sprinkle over fruit and toss together.
- Transfer to a non-stick 8-by-8-inch baking pan.
- Combine muesli, 1 cup flour, brown sugar and butter. Sprinkle over fruit.
- Bake, uncovered, at 350 degrees for 20 to 25 minutes or until golden brown. Serve warm with vanilla ice cream, if desired.
