¼ c. peach preserves
¼ c. Hickory House Cattle Drive barbecue sacue
1 tsp. ginger paste
2 tsp. fresh thyme, chopped, plus additional for garnish
1 (14-oz.) pkg. extra-firm tofu, drained, pressed, and cut into 1-inch cubes
1 yellow bell pepper, seeded and cut into 1-inch pieces
1 red bell pepper, seeded and cut into 1-inch pieces
1 c. pearl onions, whole or pieces
1 peach, pitted and cut into slices

  • 8 10-inch metal or wooden skewers

Directions

  1. Preheat a charcoal or gas grill with well-greased grill rack for direct cooking over medium-high heat.

  2. Combine peach preserves, barbecue sauce, ginger paste, and 2 teaspoons thyme in a small bowl.

  3. Thread tofu, pepper pieces, onions, and peach slices onto 8 10-inch skewers. Generously brush with peach barbecue sauce.

  4. Grill kabobs for 4 to 6 minutes or until lightly charred. Garnish with thyme sprigs, if desired.
