Party Shrimp Skewers

12 slice(s) Hy-Vee bacon, halved crosswise | ||
1 lbs. (26 to 30 count) cooked shrimp | ||
12 wooden bamboo skewers | ||
2 c. fresh pineapple chunks | ||
2 tbsp. Hy-Vee honey | ||
2 tbsp. hot sauce | ||
2 tbsp. Hy-Vee canola oil | ||
crushed red pepper |
Directions
- Preheat oven to 400 degrees.
- Tightly wrap bacon around midsection of shrimp. Push skewer through tail and body of shrimp, on either side of the bacon wrap. Repeat with remaining bacon and shrimp. Add a piece of pineapple to each shrimp skewer.
- In a small bowl, combine hot sauce and honey. Brush over shrimp skewers.
- In an oven-safe heavy skillet, heat oil and sear each side of skewer for 30 seconds. Bake for about 7 minutes or until bacon is crispy.
