    2 c.Hy-Vee reduced-fat baking mix
    1 ⅓ c.Hy-Vee skim milk
    1Hy-Vee large egg

    Directions

    1. Preheat griddle to 375 degrees. Griddle is ready when drops of water dance around a few seconds before evaporating.
    2. Stir all ingredients together in mixing bowl until blended.
    3. Bake on hot lightly greased griddle using slightly less than 1/4 cup batter for each pancake. Cook until bubbles break on surface. Turn; cook until golden.
    4. To reheat, microwave pancakes on HIGH until hot.
