Spray a griddle or heavy skillet with nonstick spray. Preheat over medium-low heat. Squeeze pancake batter to form 1/4-to-1/2-inch circles. Cook 1 to 2 minutes per side or until golden brown and cooked through.
Place pancakes in 2 shallow dishes. Top with desired mix-ins such as chopped apples, blueberries, chocolate chips, or toasted nuts. Top with butter and drizzle with with syrup.
