This vegetarian side is the perfect mash-up of sweet and savory. For some pleasing heat, dust with a little cayenne before tossing together.
Servings and Ingredients
|1 lbs. carrots, peeled and chopped|
|1 lbs. sweet potato, peeled and chopped|
|1 c. fresh cranberries, chopped, if desired|
|2 tbsp. Hy-Vee Select extra-virgin olive oil|
|2 tbsp. Hy-Vee Select 100% pure maple syrup|
|2 tbsp. Hy-Vee honey|
|1 tsp. ground coriander|
|1 tsp. sea salt|
|¼ tsp. freshly ground Hy-Vee black pepper|
|2 tbsp. fresh basil, or sage, chopped|

- Large rimmed baking sheet
- Preheat oven to 350 degrees.
In a large bowl, combine carrots, sweet potato, cranberries, olive oil, maple syrup, honey, coriander, salt and pepper. Spread onto a large rimmed baking sheet.
Bake 20 to 30 minutes or until carrots and sweet potatoes are soft and starting to brown.
Remove from oven and let stand for 10 minutes. Top with basil or sage before serving.
