    1 (3.12 oz) pkg Hy-Vee cook-and-serve vanilla pudding mix
    1 ¾ c. Hy-Vee orange juice
    1 (8 oz) container Hy-Vee lemon low-fat yogurt
    ¾ c. coarsely crushed gingersnap cookies, divided

    Directions

    1. Prepare pudding mix according to package directions, except use 1 3/4 cup orange juice instead of milk. Transfer to a bowl. Cover and refrigerate until set.
    2. Before serving, fold yogurt into pudding.
    3. Divide one-third of the pudding mixture among 6 glasses. Sprinkle with half of the crushed cookies. Repeat cookie and pudding layers. Top with remaining pudding mixture.
