Serves 4
5 oz. Kalettes, sliced lengthwise
2 tbsp. apple cider vinegar
¼ tsp. salt, divided
2 oranges
2 tbsp. extra-virgin olive oil
Pepper, to taste
¼ c. sliced red onion
¼ c. pine nuts, toasted


  1. In salad bowl, add Kalettes and drizzle with vinegar. Sprinkle with 1/8 teaspoon salt and toss to coat. Set aside for 10 minutes.
  2. Zest orange and reserve 1 teaspoon orange zest. Peel and slice into bite-sized pieces.
  3. In a measuring cup, combine extra-virgin olive oil, reserved orange zest, remaining 1/8 teaspoon salt and pepper to taste. Shake or stir to combine dressing.
  4. Add the red onion and orange pieces to the salad bowl. Pour the dressing over the salad and toss to coat. Sprinkle pine nuts on top.
