¾ c.onion, chopped
2 clove(s)garlic, minced
3 c.fresh mushrooms, sliced
1(14.5-oz.) can Hy-Vee petite-cut diced tomatoes, undrained
1 tsp.Hy-Vee Italian seasoning
¼ tsp.Hy-Vee black pepper
1 c.uncooked Hy-Vee elbow macaroni
1(14.5-oz.) can Hy-Vee 33%-less-sodium chicken broth
2 c.chicken, cooked and cubed
1(4-oz.) can Hy-Vee sliced black olives, drained
1 c.Hy-Vee finely shredded Italian blend cheese

Directions

  1. Heat olive oil in a large skillet over medium heat. Cook onions and garlic for 2 minutes. Stir in mushrooms; cook until liquid evaporates, about 5 minutes.

  2. Add tomatoes, Italian seasoning, black pepper, macaroni and chicken broth. Cover and simmer for 10 minutes.

  3. Stir in chicken and sprinkle with olives and cheese. Cook until chicken is heated through (165 degrees) and cheese is melted.
