Oatmeal Turtle Brownie

2 ½ c. uncooked quick-cooking oatmeal | ||
¾ c. flour | ||
½ c. packed brown sugar | ||
½ tbsp. baking soda | ||
½ c. Promise trans-fat-free stick margarine, melted | ||
⅓ c. chopped pecans | ||
1 (19.8 oz) pkg Hy-Vee fudge brownie mix | ||
¼ c. water | ||
½ c. canola oil | ||
2 eggs | ||
½ c. Smucker's caramel ice cream topping |
Directions
- Preheat oven to 350 degrees.
- Stir together oatmeal, flour, brown sugar and baking soda in bowl. Stir in melted margarine.
- Reserve 1 cup oatmeal mixture. Stir pecans into reserved 1 cup oatmeal mixture.
- Press remaining oatmeal mixture into a 9-by-13-inch baking dish. Bake 10 minutes; cool.
- Stir brownie mix, water, oil and eggs until well blended. Spread evenly over baked oatmeal layer. Sprinkle with reserved oatmeal/nut mixture.
- Bake 25 to 30 minutes or until toothpick inserted comes out clean. Cool 2 hours.
- Drizzle caramel topping over top of each brownie right before serving.
