    6 medium green peppers
    1 lbs. uncooked ground beef
    ⅓ c. chopped onion
    1 (14.5 oz) can Hy-Vee Italian-style diced tomatoes
    1 ½ c. uncooked Hy-Vee old-fashioned oats
    1 (15 oz) can Hy-Vee tomato sauce
    1 c. Hy-Vee tomato juice
    ½ c. Hy-Vee medium salsa

    Directions

    1. Heat oven to 350 degrees.
    2. Cut off tops of green peppers; remove seeds and membrane.
    3. In a skillet over medium heat, brown ground beef and onion. Drain. Mix in diced tomatoes, oatmeal and tomato sauce.
    4. Fill each pepper cup with about 1 cup beef mixture. Place in 9-by-9-inch baking dish.
    5. Pour tomato juice and salsa evenly over tops of peppers.
    6. Bake for 45 to 50 minutes or until beef reaches 160 degrees.
