    ½ c. vegan margarine, softened
    1 ½ c. applesauce
    ½ c. molasses or maple syrup
    2 large peeled ripe bananas
    1 ¾ c. whole wheat pastry flour
    1 tsp. baking soda
    1 tsp. baking powder
    1 tsp. cinnamon
    1 tsp. nutmeg
    3 c. rolled oats
    ½ c. raisins or chopped dates
    chopped walnuts or chopped apples, optional

    Directions

    1. Preheat oven to 400 degrees.
    2. Cream together margarine, applesauce, molasses (or maple syrup) and bananas in a large bowl.
    3. Add whole wheat pastry flour, baking soda, baking powder, cinnamon, nutmeg, rolled oats and raisins (or dates). Mix well.
    4. Stir in chopped walnuts or apples, if desired.
    5. Drop batter by rounded tablespoons onto a lightly oiled cookie sheet.
    6. Bake at 400 degrees for 8 minutes.
    7. Allow cookies to cool before removing from cookie sheet.
