    3 tbsp. plus 1 tsp Hy-Vee granulated sugar
    3 tbsp. quick tapioca
    2 cinnamon sticks
    ½ tsp. Hy-Vee ground cinnamon
    2 c. Hy-Vee dried mixed fruit
    1 c. Hy-Vee dried cherries
    Waffles
    ½ c. whole grain oat flour
    2 tsp. Hy-Vee baking powder
    ¼ tsp. Hy-Vee salt
    1 c. Hy-Vee skim milk
    2 tbsp. Hy-Vee unsalted butter, melted
    1 omega egg, separated

    Directions

    1. For fruit topping, mix juice, 3 tablespoons sugar, tapioca, cinnamon sticks and cinnamon in medium saucepan; let stand 5 minutes. Cook on medium heat, stirring constantly, until mixture comes to a full boil. Add dried fruit and simmer, uncovered, on low for 20 to 25 minutes, or until fruit is tender. Remove cinnamon stick; set aside and keep warm.
    2. For waffles, mix flours, baking powder, 1 teaspoon sugar and salt in medium bowl. Stir in milk, butter and egg yolk until blended.
    3. Beat egg white in small bowl on high speed until stiff peaks form. Fold flour mixture into egg white. Pour about 1 cup batter onto center of preheated waffle iron. Bake until steaming stops. Repeat with remaining batter. Serve 1/3 cup warm fruit mixture with each oat waffle.
