    ½ c. rolled oats
    1 ¼ c. soymilk
    2 tbsp. brown sugar
    1 tbsp. soy oil, optional
    2 tsp. dry yeast
    ¼ c. lukewarm water
    1 tsp. salt
    ½ c. soy flour
    ½ c. white bread flour
    2 c. whole wheat flour

    Directions

    1. Put oats in large mixing bowl. Heat soymilk, brown sugar and oil until almost boiling and pour over oats. Let cool to lukewarm.
    2. Dissolve yeast in warm water in a small bowl. When bubbles start to form, stir yeast mixture into oat mixture.
    3. Using a large wooden spoon, beat in salt, soy flour, white flour and whole wheat flour to make a soft dough.
    4. Turn dough out onto lightly floured surface and knead 5 to 10 minutes until smooth and elastic. Dough will be sticky.
    5. Cover with a cloth and let rise until doubled, about 1-1/2 hours.
    6. Punch dough down. Shape into a loaf and place in greased loaf pan. Let rise until it reaches the top of the pan.
    7. Bake at 350 degrees about 35 to 40 minutes, until golden and loaf sounds hollow when tapped on the bottom. (If loaf is browning too quickly, cover loosely with foil to prevent further browning.)
    8. Remove from pan immediately and let cool on a rack.
