Lactation Dark Chocolate Oatmeal Cookies
Created by our chefs and dietitians, this lactation cookie recipe includes oatmeal, B-complex vitamins from brewer's yeast, and fiber and omega-3s from flax—all things that may help new moms with lactation.
Servings and Ingredients
|¾ c. Hy-Vee all-purpose flour|
|¾ c. Hy-Vee whole wheat flour|
|½ c. milled flax|
|½ c. milled chia|
|3 tbsp. brewer's yeast|
|1 (3.4 oz) box Hy-Vee vanilla pudding mix|
|1 ¾ c. Hy-Vee old fashioned oats|
|1 tsp. Hy-Vee salt|
|1 tsp. Hy-Vee baking soda|
|1 tsp. Hy-Vee ground cinnamon|
|½ c. Hy-Vee butter, softened|
|½ c. natural peanut butter, softened|
|½ c. Hy-Vee granulated sugar|
|½ c. packed Hy-Vee brown sugar|
|3 Hy-Vee large eggs|
|½ c. water|
|1 tbsp. Hy-Vee vanilla extract|
|1 c. chopped Hy-Vee walnuts|
|1 (10 oz) bag Hy-Vee Select 60% dark chocolate chips|
- Preheat oven to 350 degrees.
- In a large bowl combine flours, milled flax and chia, brewer's yeast, pudding mix powder, oats, salt, baking soda and cinnamon; set aside.
- In a mixing bowl, beat butter, peanut butter, white and brown sugars until smooth and creamy. Add eggs, water and vanilla and mix until fully combined. Gradually beat in flour mixture until moistened. Stir in walnuts and chocolate chunks, being sure to not over-mix.
- Drop by rounded tablespoons on a cookie sheet and press lightly with a fork. Bake 8 to 10 minutes.
