North African Shrimp Scampi
Servings and Ingredients
|1 lbs. shrimp, peeled and deveined|
|3 tsp. Ras El Hanout|
|kosher salt and freshly ground pepper, to taste|
|3 tbsp. extra-virgin olive oil|
|3 to 4 cloves garlic, minced|
|1 preserved lemon, peel only, rinsed and chopped|
|2 to 3 tsp harissa paste or a pinch of crushed red pepper flakes|
|3 tbsp. lemon juice|
|2 tbsp. chopped cilantro|
|2 tbsp. chopped Italian parsley|
- Season shrimp with Ras El Hanout, salt and pepper on both sides.
- Heat oil in a large saute pan over medium high heat. Add garlic, preserved lemon and harissa. Saute for one minute or until fragrant.
- Add shrimp and saute approximately 3 minutes per side or until just pink and just beginning to curl into a tight "C" shape.
- Add lemon juice, cilantro and parsley. Toss to coat and serve immediately.
