⅓ c. Sola plain Greek yogurt
2 c. baby spinach, divided
1 ½ oz. Hy-Vee plain cream cheese, softened
¾ c. Hy-Vee Select shredded Parmesan cheese
⅓ c. avocado, pitted, peeled, and mashed
1 ½ tsp. garlic paste
½ (14-oz.) can Hy-Vee quartered artichoke hearts, drained and chopped
Shaved Parmesan cheese, for garnish

Directions

  1. Place yogurt, 1 cup spinach leaves, cream cheese, Parmesan cheese, mashed avocado, and garlic paste in a food processor. Cover and process until smooth.

  2. Place yogurt-spinach mixture in a medium bowl. Fold in artichokes. Place remaining spinach in a microwave-safe bowl. Microwave on HIGH for 30 to 60 seconds or until wilted. Drain spinach and stir into dip mixture. Garnish with shaved Parmesan, if desired.
