Open cheesecake mix, separate cheesecake mix from graham cracker crumbs. Mix together graham cracker crumbs, sugar, and melted butter in a medium bowl. Press into an 8-or-9-inch spring form pan. Cover and refrigerate.

|2 tbsp. Hy-Vee granulated sugar|
|5 tbsp. Hy-Vee unsalted butter, melted|
|1 ½ c. Hy-Vee 2% reduced-fat milk, cold|
|1 fresh lemon, zested|
|2 to 3 Colorado peaches, peeled, pitted, and thinly sliced|
|1 (3-oz.) pkg. peach-flavored Jell-O|
|1 c. boiling water|
|1 c. cold water|

Place cheesecake mix in a large bowl. Beat in lemon zest and cold milk with an electric mixer for 3 minutes or until thickened. Pour cheesecake batter over graham cracker crust. Cover and refrigerate 1 hour or until firm.
Arrange sliced Colorado peaches in a circular formation over cheesecake layer.
Pour peach-flavored Jell-O packet into a large bowl. Add boiling water to Jell-O mix and stir 2 minutes or until completely dissolved. Stir in cold water. Cool slightly, pour over fresh peach layer. Cover and refrigerate until Jell-O has set, about 4 hours.
