New England Apple Pie
Servings and Ingredients
|2 unbaked gluten-free pie crusts|
|8 apples, such as a mix of Northern Spy, Russet, Baldwin, Golden Delicious, Granny Smith, peeled, cored and sliced|
|½ c. dark brown sugar|
|½ c. granulated sugar, plus additional for topping|
|2 tbsp. tapioca starch|
|½ tsp. gluten-free ground cinnamon|
|Cheddar cheese slices, for serving|
- Preheat oven to 400 degrees. Line a glass pie dish with one pie crust; set aside.
- Toss apples with dark brown sugar, granulated sugar, tapioca starch and cinnamon and pour into crust. Place the remaining crust on top, crimp sides to seal and cut several steam holes.
- Sprinkle pie with about 2 tablespoons of granulated sugar. Place pie on a rimmed cookie sheet.
- Bake for 50 minutes or until crust is golden brown and pie is bubbly. Serve pie with slices of cheddar cheese on the side or melted on top.
