⅓ c. Hy-Vee butter or margarine
8 oz. sliced Monterey mushrooms
½ c. thinly sliced green onions
2 c. Hy-Vee beef broth
1 c. Hy-Vee long-grain white instant rice
salt and pepper, to taste
½ c. sliced almonds


  1. Melt butter in saucepan and saute mushrooms and onions in butter for 2 to 3 minutes. Add beef broth and rice. Bring to a boil. Reduce heat and simmer until all liquid is absorbed, about 20 minutes.
  2. Remove to serving bowl. Season with salt and pepper and sprinkle with almonds on top.
