Mushroom Caps Royale
Servings and Ingredients
|1 lbs. large mushrooms (12 to 14)|
|1 tbsp. fresh squeezed lemon juice; grated peel of lemon|
|2 tbsp. butter or margarine, melted|
|1 c. cooked chopped broccoli, drained|
|¼ c. mayonnaise or salad dressing|
|¼ c. grated Parmesan cheese|
- Remove stems from mushrooms; chop and set aside.
- Bake at 350 degrees for 13 to 15 minutes, or until heated through.
- Combine lemon juice and 1 tablespoon butter. Brush on mushroom caps. Arrange, cavity-side up, in a 12-by-8-by-2-inch baking dish.
- In a small skillet, saute chopped mushroom stems in remaining 1 tablespoon of butter until just tender. Add broccoli, mayonnaise, Parmesan cheese, and lemon peel. Spoon about 1-1/2 tablespoons into each mushroom cap. Sprinkle with paprika.
