1 lbs.large mushrooms (12 to 14)
1 tbsp.fresh squeezed lemon juice; grated peel of lemon
2 tbsp.butter or margarine, melted
1 c.cooked chopped broccoli, drained
¼ c.mayonnaise or salad dressing
¼ c.grated Parmesan cheese
dash(es)Paprika

Directions

  1. Remove stems from mushrooms; chop and set aside.
  2. Bake at 350 degrees for 13 to 15 minutes, or until heated through.
  3. Combine lemon juice and 1 tablespoon butter. Brush on mushroom caps. Arrange, cavity-side up, in a 12-by-8-by-2-inch baking dish.
  4. In a small skillet, saute chopped mushroom stems in remaining 1 tablespoon of butter until just tender. Add broccoli, mayonnaise, Parmesan cheese, and lemon peel. Spoon about 1-1/2 tablespoons into each mushroom cap. Sprinkle with paprika.
