Moo Shu Turkey Wraps

Servings and Ingredients
|1||(16 oz) package Jennie-O lean ground turkey|
|8 oz.||shiitake mushrooms, stems discarded and caps sliced|
|2 tsp.||garlic, minced|
|2 tsp.||fresh ginger, minced|
|1||medium red or yellow bell pepper, seeded and cut into short, thin strips|
|2 c.||coleslaw mix , or sliced Napa cabbage|
|½ c.||hoisin sauce|
|⅓ c.||plum sauce , or sweet-and-sour sauce|
|6||(8-inch) flour tortillas, warmed|

- Meat thermometer
- Cook ground turkey as specified on package. Always cook to well-done, 165 degrees as measured by a meat thermometer.
- Add mushrooms, garlic and ginger root; stir-fry 2 minutes. Add bell pepper and cook 10 minutes, stirring occasionally. Add coleslaw mix and hoisin sauce; stir-fry 3 minutes.
- Spread plum sauce evenly over each warm tortilla; top with turkey mixture. Fold bottom tortilla up over filling and serve.
