Mongolian Sloppy Joe Sliders

1 medium red onion, chopped | ||
½ c. minced celery | ||
1 c. diced cremini mushrooms | ||
1 ½ tsp. minced garlic (about 2 cloves) | ||
1 lbs. 93%-lean ground sirloin | ||
1 ½ tbsp. sambal oelek or sriracha | ||
1 ½ tsp. minced ginger | ||
¼ c. hoisin sauce | ||
2 tbsp. oyster sauce | ||
2 tbsp. low-sodium tamari or liquid aminos | ||
1 tbsp. honey | ||
2 tbsp. lime juice | ||
8 Hawaiian rolls or slider buns | ||
Shredded iceberg lettuce and spicy pickles, for serving |
Directions
- Heat a large, deep skillet over medium heat for 3 to 4 minutes; add oil and heat until shimmering. When hot, add onions, celery and mushrooms and cook until vegetables are softened, about 8 minutes. Add garlic and cook 30 seconds.
- Add ground sirloin and cook until almost cooked through but still slightly pink, about 3 minutes, breaking up the meat with a spoon.
- Stir in sambal oelek, ginger, hoisin sauce, oyster sauce, tamari and honey; bring to boil. Reduce heat; simmer 5 minutes, stirring often. Add lime juice and stir to combine. Place about 1/3 cup beef mixture on bottom half of each bun; close sandwiches. Serve with iceberg lettuce and spicy pickles if desired.
- To make ahead, cover and refrigerate for up to 3 days. Reheat before serving.
