    2 tsp. canola oil
    1 medium red onion, chopped
    ½ c. minced celery
    1 c. diced cremini mushrooms
    1 ½ tsp. minced garlic (about 2 cloves)
    1 lbs. 93%-lean ground sirloin
    1 ½ tbsp. sambal oelek or sriracha
    1 ½ tsp. minced ginger
    ¼ c. hoisin sauce
    2 tbsp. oyster sauce
    2 tbsp. low-sodium tamari or liquid aminos
    1 tbsp. honey
    2 tbsp. lime juice
    8 Hawaiian rolls or slider buns
    Shredded iceberg lettuce and spicy pickles, for serving

    Directions

    1. Heat a large, deep skillet over medium heat for 3 to 4 minutes; add oil and heat until shimmering. When hot, add onions, celery and mushrooms and cook until vegetables are softened, about 8 minutes. Add garlic and cook 30 seconds.
    2. Add ground sirloin and cook until almost cooked through but still slightly pink, about 3 minutes, breaking up the meat with a spoon.
    3. Stir in sambal oelek, ginger, hoisin sauce, oyster sauce, tamari and honey; bring to boil. Reduce heat; simmer 5 minutes, stirring often. Add lime juice and stir to combine. Place about 1/3 cup beef mixture on bottom half of each bun; close sandwiches. Serve with iceberg lettuce and spicy pickles if desired.
    4. To make ahead, cover and refrigerate for up to 3 days. Reheat before serving.
