Mom's Rhubarb Butter Crunch

1 c. granulated sugar | ||
3 tbsp. flour | ||
1 c. brown sugar | ||
1 c. uncooked oatmeal | ||
1 ½ c. flour | ||
½ c. butter | ||
½ c. vegetable shortening | ||
thawed whipped topping or ice cream, for serving |
Directions
- Preheat oven to 375 degrees. Spray a 6-by-10-inch baking dish with nonstick cooking spray.
- Combine rhubarb, granulated sugar and 3 tablespoons flour. Place in prepared baking dish.
- Combine brown sugar, oatmeal and 1-1/2 cups flour. Cut in butter and shortening. Sprinkle over rhubarb.
- Bake for 40 minutes.
- Serve warm with whipped topping or ice cream, if desired.
