Add sour cream, fresh mint, and lime juice. Cover and process until well-combined and nearly smooth. Season to taste with salt and pepper. Transfer to a serving bowl. Garnish with additional thawed peas if desired. Serve immediately or cover and store in the refrigerator for up to 3 days. Serve with whole-grain bread or crackers.
