    1 (1.2 pound) pkg lean ground turkey breast
    1 clove(s) garlic, minced
    2 green onions, finely chopped
    1 tbsp. grated fresh gingerroot
    1 ½ tsp. ground cumin
    ½ tsp. Hy-Vee salt
    ¼ tsp. Hy-Vee pepper
    1 tbsp. Hy-Vee Select olive oil
    ½ c. light mayonnaise
    ½ tsp. curry powder
    1 tbsp. Hy-Vee apricot preserves
    8 Hy-Vee cocktail buns, toasted
    8 tomato slices
    8 lettuce leaves

    Directions

    1. Combine turkey, garlic, onions, gingerroot, cumin, salt and pepper in a large bowl. Mix lightly but thoroughly.
    2. Shape turkey mixture into eight miniature-size burgers. Brush tops of patties with oil.
    3. Grill covered, for 8 to 10 minutes, turning once, or until internal temperature of burgers reaches 165 degrees.
    4. Meanwhile for apricot-curry mayonnaise, combine mayonnaise, curry powder and apricot preserves. Serve burgers in buns with apricot-curry mayonnaise, tomato slices and lettuce leaves.
