Mile-High Grilled Cheese
Melty cheese, crisp bread and fresh veggies come together to make a fantastic vegetarian sandwich.
Servings and Ingredients
|6 oz.||Hy-Vee cheddar or white cheddar cheese, sliced|
|¼ c.||Hy-Vee butter, melted|
|8 slice(s)||Hy-Vee Bakery whole grain bread|
|2||avocados, peeled, seeded and sliced|
|1 c.||shredded carrot|
|1||red bell pepper, seeded and thinly sliced|
|1 c.||chopped red onion|
- Cut cheese into 12 (1/2-ounce) slices; set aside.
- Brush one side of each slice of bread with butter; place, buttered side down, on waxed paper. Top half of the bread slices with 3 slices cheese; layer one-fourth of the avocado, carrot, red pepper and red onion on top of each. Top sandwiches with remaining bread slices, buttered sides up.
- In a large skillet cook sandwiches over medium-high heat for 6 to 8 minutes or until bread is toasted, turning once halfway through cooking. (Or place sandwiches in a sandwich press and cook about 6 minutes or until done.)
