    6 medium red bell peppers
    3 c. dry Hy-Vee instant brown rice
    1 lbs. 95%-lean ground beef
    1 (1.25 oz) package Hy-Vee taco seasoning
    1 yellow onion, diced
    ½ c. Hy-Vee Mexican 2% shredded cheese

    Directions

    1. Slice off tops of bell peppers and remove seeds and membranes. Bring a large pot of water to a boil and boil red peppers for 5 minutes.
    2. Prepare rice according to package instructions. Meanwhile brown ground beef in a large skillet. After 5 minutes, stir in taco seasoning and onions. Continue cooking for 5 minutes. Add cooked rice and mix well.
    3. Stuff bell peppers with meat mixture and prop upright in an 8-by-8-inch baking dish. Top with cheese. Broil for 1 to 2 minutes or until cheese is melted.
