½ large head green cabbage, finely chopped
½ c. finely chopped cilantro , plus additional for serving
2 tbsp. 100% lime juice from concentrate
2 (15-oz.) cans Hy-Vee no salt added black beans, drained and rinsed
1 c. finely chopped Basket & Bushel grape tomatoes
1 (8-oz.) bottle Primal Kitchen green goddess dressing and marinade
1 avocado, seeded, peeled and sliced; for garnish
Crumbled Cotija cheese, for garnish

Directions

  1. Microwave frozen corn according to pkg. directions. Carefully open bag and cool corn.

  2. Stir together cabbage, 1/2 cup cilantro and lime juice in a large bowl.

  3. Add cooled corn, black beans, tomatoes and dressing; toss to coat.

  4. Divide into 4 serving dishes. Garnish with avocado, Cojita cheese and additional cilantro, if desired.
