Mediterranean Vegetable Salad
Servings and Ingredients
|2 c.||chopped fresh tomatoes|
|1 c.||unpeeled chopped cucumbers|
|⅓ c.||(1-1/2 oz) shredded reduced-fat mozzarella cheese|
|1 tbsp.||chopped fresh parsley or 1 tsp dried parsley flakes|
|¼ c.||fat-free Italian dressing|
- In a large bow, combine tomatoes, cucumbers, mozzarella cheese and parsley.
- Add Italian dressing. Mix gently to combine.
- Cover and refrigerate for at least 20 mintues. Gently stir again just before serving.
