2 medium yellow bell peppers, cored and seeded, each cut into 6 wedges
¼ c. minced kalamata olives
¼ c. minced red onion
¼ c. seeded and minced tomato
1 ½ tsp. dried oregano
12 tbsp. crumbled feta, divided
Hy-Vee Select olive oil, for drizzling

Directions

  1. Place peppers on a baking sheet. Combine kalamata olives, red onion, tomato and dried oregano. Spoon 1 tablespoon onto each pepper wedge and top each with 1 tablespoon crumbled feta. Drizzle with olive oil. Bake in a 450-degree oven for 12 to 15 minutes or until cheese begins to brown but peppers are still firm.
