Description
Dietitian Tip: Bell peppers are one of the best food sources of immune-enhancing Vitamin C; one cup provides 290 percent of the daily value. Yellow, orange and red peppers are much sweeter than the green varieties.

¼ c. minced kalamata olives | ||
¼ c. minced red onion | ||
¼ c. seeded and minced tomato | ||
1 ½ tsp. dried oregano | ||
12 tbsp. crumbled feta, divided | ||
Hy-Vee Select olive oil, for drizzling |
Directions
- Place peppers on a baking sheet. Combine kalamata olives, red onion, tomato and dried oregano. Spoon 1 tablespoon onto each pepper wedge and top each with 1 tablespoon crumbled feta. Drizzle with olive oil. Bake in a 450-degree oven for 12 to 15 minutes or until cheese begins to brown but peppers are still firm.
