2 tbsp. Gustare Vita olive oil, divided
2 c. Hy-Vee Sweet grape tomatoes, halved
3 tsp. Mrs. Dash lemon pepper seasoning, divided
1 tbsp. Gustare Vita capers, drained and rinsed
¼ c. green olives, halved and pitted
¼ c. Kalamata olives, halved and pitted
4 (4-to-6-oz. each) cod fillets, thawed if frozen

Directions

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Sprinkle both sides of cod with 1 teaspoon lemon pepper seasoning. Place cod in hot skillet. Cook 6 minutes, turning once halfway through. Remove cod from skillet; keep warm.

  2. Heat remaining 1 tablespoon olive oil in same skillet over medium heat. Add tomatoes, capers, green and Kalamata olives and remaining 2 teaspoon lemon pepper seasoning. Cook 2 minutes or until tomatoes have softened. Serve tomato mixture over each cooked fillet of cod.
